4 cups sifted
all purpose flour
1/4 cup sugar
1 tsp baking powder
1/4 cup butter
1/4 tsp salt
2 cups raisins
1 1/3 cups buttermilk
1 egg
1 tsp baking soda
2 tbsp caraway seeds
Sift and mix
flour, sugar, salt, baking powder and caraway seeds. Cut in butter
with pastry knife. Stir in raisins. Combine buttermilk, egg and
baking soda. Stir buttermilk mixture into flour mixture until just
moistened. Flour hands and knead until smooth, about 25 times. Bake
in greased 8 inch cake pan at 375 degrees for 40 - 45 minutes. Brush
top with milk before baking.
