Irish Soda Bread First Prize Recipe - The Millennium Reunion

4 CUPS FLOUR 2 EGGS
3 TBSP SUGAR 1 TBSP BAKING POWDER
3 TBSP CARAWAY SEEDS 1 CUP RAISINS
1 TSP SALT 6 TBSP BUTTER SOFTENED
1 1/2 CUPS BUTTERMILK 1 TBSP BUTTERMILK (EXTRA)
1 TSP BAKING SODA  


Mix the flour with the baking powder, baking soda, sugar and salt.

Cut butter into the flour mixture with two knives (used in a scissors fashion) or with a pastry blender until the whole mixture resembles fine meal.

Mix in caraway seeds and raisins. Combine the two eggs with the buttermilk (reserving one tablespoon) and then add to the flour mixture with a spoon and mix until all ingredients are combined and moistened. (The dough may be sticky at this point)

Turn dough onto lightly floured surface and knead about ten times to combine all the ingredients.

Place dough into a greased round casserole dish (8-9 inches or 1 1/2 -2 qts) or two load pans measuring 8X2 inches.

Make sign of the cross about 1 1/2 inches deep on top of the dough with a knife. Rub remaining tablespoon of buttermilk mixture over the top of the loaf.

Bake in oven at 350 degrees for 50-60 minutes if using the round casserole dish or for 40 minutes if using the loaf pans.

Soda bread is done when a toothpick, which is inserted into the loaf, comes out clean.
